Booking basics
Pizza caterers book by the date, not the walk-in — popular Saturdays (especially May–October) go months out, so inquire early with your date, venue, guest count, and whether you want full catering or an oven drop-off. Most will hold a date with a deposit and a signed agreement.

“😍 The crust is really surprising for a mobile truck, the way it’s super thin and blistered (as a good pie should be) seems like something you generally only get from brick oven.”
“My wife was born in Italy and she consider's it some of the best classic Neapolitan pizza she has had in the US.”
“If you’re anywhere near Narrows Brewery on a Thursday and don’t stop by this pizza food truck, you’re seriously missing out.”

“The Galileo food truck was at Urban Craft Uprising, and the cannoli’s hit the spot after shopping!”
What hosts say again and again

“The service was prompt and friendly, with the pizzaiolos working their magic right in front of us.”
From the reviews
stumbled upon this place at a farmers market a few weeks ago & been making it a goal to find it every week because it’s just that good i can’t get enough. reminds me of the pizza in italy! the people are amazing & kind and the pizza is just mind blowing.
If you’re anywhere near Narrows Brewery on a Thursday and don’t stop by this pizza food truck, you’re seriously missing out. This isn’t just food—it’s an experience. The husband (who’s as authentically Italian as it gets) crafts each pizza with passion, skill, and ingredients that are unbelievably fresh.
There's only two places to have genuine Italian pizza: Italy and at Galileo's Pizzeria. I had virtually given up on finding real non-Americanized pizza when I happened upon Fabio stand at the Puyallup farmers market and even then the wait was so so long that I almost skipped passed. Boy howdy am I glad I didn't!
Any time my wife and I are at the Puyallup Farmers' Market we find an excuse to get some of Fabio's pizza. My wife was born in Italy and she consider's it some of the best classic Neapolitan pizza she has had in the US. It is made in a wood fired oven and has a bit of char which is characteristic of this style.
Booking Galileo’s Pizzeria for a wedding
Weddings come up for Galileo’s Pizzeria — confirmed on their own site, so they'll know the rhythm of the day: everyone gets hungry at once after the ceremony, then the oven settles into a steady flow of pies until the dance floor takes over. Two numbers get your quote right. First, the pizza math: caterers typically plan on roughly one 12-inch pizza for every two to three adults, and per-person packages usually already bake that in — just be honest about your headcount, including kids and vendors. Second, the serving rate: a mobile oven cooks pies a couple at a time, so ask how many ovens and cooks they bring at your guest count and how long full service takes — that's the difference between a steady buffet and a hungry line during toasts. If anyone at the table is gluten-free or vegan, say so at the first email so the right dough travels with them.
